Thymus herba-barona - CARAWAY THYME
Semi-evergreen to evergreen, very low growing thyme.
Very strong caraway odor, pink flowers in early summer.
Culinary uses - combine with meat, in stews. Antiseptic, disinfectant, and deodorant properties.
Fast growing and easy - requires only sun and somewhat drained soils.
It is ground-covering plant, but not competitive, so other plants or weeds can still seed in.
Blooming Time: June-July
Size: only 1-2" tall x 1.5-2' wide and spreading.
USDA Zones: 4 to 8
Culture: full sun, average soils with some drainage. Soils that tend to dry out fast, also leaner or shallow soils, soils with gritty component (add sand, or gravel)
Moisture Needs: medium, medium-dry, dry
Origin: Mediterranean (Corsica, Sardinia)
Deer/Rabbit Resistant: no / no (needs some protection)
Attracts Butterflies or Pollinators: bees
Attracts Hummingbirds: no
Pot Size: square 3.5" x 4" deep pot
Plant combinations: Herb garden, rock gardens, xeriscape, retaining walls, big containers, pollinator gardens, deer resistant garden. Goes well with many native and non-native perennials that stay on the average to drier side. Combine with shorter plants like shorter Agastache, Allium 'Summer Beauty' and similar summer blooming Alliums, Calamintha, smaller bearded Iris, Euphorbia, Eryngium, shorter Echinacea hybrids, shorter Gaura, Geranium, Nepeta, Paeonia, shorter Perovskia, Phlomis, Platycodon, short Rudbeckia, Salvia, Salvia nemorosa hybrids, Satureja, taller Sedum, Stachys, Stokesia, Veronica spicata hybrids, and smaller grasses.
